For anyone that has done a DIY coating (a forgiving one like Meguiar Hybrid Paint coating), what surfaces did you coat? Can I do it on the self-healing grill?

Any tips?

I did the Gyeon Synchro Evo V2 on mine, and I did it on pretty much every exterior surface except the self healing grill. All other exterior panels, including the black trim, were fine though. It was pretty easy for my first time doing it, and so far has lasted pretty well. I did end up with a few high spots that I had to go back and correct, I will say the black trim pieces show excess dried material easier than the Oxide Gray so it was easier to identify those spots that needed a touch up.

No issues the plastic trim?

Nope, other than the mentioned part above where it was easier to see if I had excess material on them, they cleaned off the same and I haven’t had any issues with the coating on any parts of the car.
