In iDrive versions thru 03/2019.xx, only the "individual" value bucket can be manually reset. Perhaps this will change in subsequent versions, hence my mention of experience thru revisions to date.
RE: values in tach widget; it shows the values to which you have selected to show in iDrive on the "driving information" screen of the main (center) display.
