You can get dual-lens dash cams like the ones popular with rideshare drivers. They will record front of the car and inside the cabin. There are also front and rear dash cam sets where the rear cam is a separate unit but integrated into the front cam and you manage it as one camera unit.

Finally for true 360 degree view, the Insta360 One X2 360 camera has a 'dashcam mode' that records continuously and overwrites older clips (like a dashcam) but it does not switch on/off with ignition like a proper dashcam should.
